For the Chicken Burgers:

  • 1½ pounds ground chicken (93/7 lean-to-fat ratio)
  • ½ red bell pepper, chopped
  • ½ poblano pepper, chopped (or substitute with green bell pepper)
  • 1 green onion, chopped
  • Juice of ½ lime
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

For the Chili Seasoning:

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper

For the Avocado Salsa:

  • 1 large ripe avocado, diced
  • Juice of ½ lime
  • ½ teaspoon of the prepared chili seasoning

Prepare the Chili Seasoning:

  • In a small bowl, combine chili powder, ground cumin, ¼ teaspoon salt, and ⅛ teaspoon black pepper.
  • Mix well and set aside.

Make the Avocado Salsa:

  • In a medium bowl, gently combine diced avocado, juice of ½ lime, and ½ teaspoon of the prepared chili seasoning.
  • Cover and refrigerate until ready to use.

Prepare the Chicken Burgers:

  • In a large bowl, combine ground chicken, chopped red bell pepper, chopped poblano pepper, chopped green onion, juice of ½ lime, ½ teaspoon salt, and ¼ teaspoon black pepper.
  • Mix until just combined; avoid overmixing to prevent tough burgers.
  • Divide the mixture into four equal portions and shape into patties.
  • Sprinkle each patty with the remaining chili seasoning.

Cook the Burgers:

  • Heat a grill or skillet over medium-high heat.
  • Cook the patties for about 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the burgers are cooked through.

Assemble and Serve:

  • Serve the chicken burgers topped with the prepared avocado salsa.
  • Optionally, serve on buns or in lettuce wraps, and garnish with additional lime wedges or fresh herbs as desired.
